Cyclodextrin has a hole in the center of the ring structure, with
-CH- oxygen atoms bound to glucoside inside, which is hydrophilic.
The -OH groups at the 2nd, 3rd and 6th positions of glucose are
hydrophilic, and can complex other molecules into inclusion
compounds through weak van der Waals forces.
There are many substances that can be included by cyclodextrin,
including rare gases, halogens, dyes, spices, drugs, foods,
pesticides and preservatives. After inclusion, its stability,
volatility, solubility and reactivity are improved. This special
